For many of us, green chile is home.

I grew up in New Mexico surrounded by those traditions. Like so many New Mexicans, green chile was part of everyday life. It was on our breakfast burritos, our burgers, our enchiladas, and sometimes honestly… on just about everything. It was more than something we ate. It was part of our identity.

About 20 years ago, I left New Mexico to join the military and spent years traveling the world. I experienced different cultures, different foods, and incredible places, but no matter where I went, there was always one thing I missed more than I expected… real Hatch green chile.

Anyone from New Mexico understands this. You can explain it to people, but unless they have lived it, they do not fully get it. It is not just about spice. That never sat right with me.
