About 20 years ago, I left New Mexico to join the military and spent years traveling the world. I experienced different cultures, different foods, and incredible places, but no matter where I went, there was always one thing I missed more than I expected… real Hatch green chile.

Anyone from New Mexico understands this. You can explain it to people, but unless they have lived it, they do not fully get it. It is not just about spice.
