What is freeze-dried green chile?

Freeze-dried green chile is real Hatch green chile with the water removed while keeping the flavor, heat, and nutrients. Add a little water and it comes right back to life like fresh roasted chile.

Is this real Hatch green chile, and why is Hatch so special?

Yes. We use 100% Hatch New Mexico green chile sourced, roasted, and processed in New Mexico's Hatch valley. Hatch is special because of its unique growing conditions -- rich soil, desert climate, and generations of farming tradition. The result is a bold, smoky flavor with the perfect balance of heat. Not all green chile is created equal; chile grown outside of Hatch simply doesn't have the same depth, flavor, or reputation. There's a reason people wait all year for the Hatch harvest season.

How do I use freeze-dried green chile?

How spicy is your green chile?

We offer three heat levels: Mild, Medium, and Hot. Each bag is clearly labeled.

How long does it last?

Freeze dried green chile lasts up to 1 year or longer when stored sealed in a cool, dry place. Once opened, it will stay fresh for several weeks or longer as long as it is kept dry and the bag is sealed tightly after each use. No refrigeration is needed while it's dry. After rehydrating, store it in the fridge just like fresh chile. Each bag is resealable.

Does it taste the same as fresh roasted chile?

Yes. Freeze drying locks in the flavor. When rehydrated, it tastes exactly the same as fresh roasted chile.

Do you offer free shipping?

Yes. Shipping is always free! Freeze drying removes the weight and eliminates the need for dry ice and overnight delivery, allowing us to keep costs down and pass the savings on to customers.

Do you ship internationally?

Not yet. We currently ship within the United States only. Our goal is to expand so more people can enjoy real Hatch New Mexico green chile.
