Directions
In a large pot, brown the chopped beef and onion in oil over medium heat. Add the potatoes and carrots and cook for a few more minutes until slightly softened.
Next, stir in the chopped green chile, tomatoes, and corn. Add enough water to cover the mixture by about 2 to 3 inches.
Bring to a gentle boil, then reduce heat and simmer for about 30 minutes, or until the potatoes and carrots are tender and the flavors come together beautifully.
